The hotel's own on-site restaurant, Catedral del Hotel Colón, offers an à la carte menu of authentic local specialities from the region, as well as traditional Spanish dishes prepared with an innovative and creative touch. The menu changes regularly to reflect the best and freshest locally grown produce, sourced from nearby markets. The chef's specialities include: pickled partridge with tolosa beans, cream of pumpkin soup with black Botifarra sausage, roasted pork and cuttlefish, deer-loin fillets in a ragout of chestnuts, young garlic and cep and death trumpet mushrooms and monkfish with artichokes, wild asparagus and crayfish. The restaurant also offers tasting menus, consisting of a selection of the best specialities on offer in the restaurant. The restaurant is open from 13:00 to 15:30 and from 20:00 to 23:00.
